Balsamic reduction:
  1. Stir balsamic vinegar and honey together in a small saucepan and place over high heat. Bring to a boil, reduce heat to low, and simmer until the vinegar mixture has reduced to 1/3 Cup, about 10 minutes. Set the balsamic reduction aside to cool.
Preheat grill to high.
  1. Season filets with salt and pepper and lightly brush with olive oil.

  2. Place steaks on grill, reduce heat to medium. Cover and cook for 5 minutes per side. Reduce to low.

  3. Top with 1 tomato slice, 1 basil leaf, 1 slice mozzarella, another basil leaf, and another slice of tomato. Close the cover and grill for another 3-5 minutes or to desired doneness.

  4. Remove from heat to a platter, let rest for at least 5 minutes, drizzle with olive oil and reduced balsamic vinegar before serving. Enjoy!
